Recipe: White House Grilled Flatbread Turkey Sandwiches With Chopped Kitchen Garden Salad & Hummus

From the First Lady's Fall Kitchen Garden Harvest...
Washington, DC - First Lady Michelle Obama hosted a picnic for children on Wednesday during the Fall Harvest of her Kitchen Garden.  The 24 invited elementary school kids feasted on Grilled Flatbread Turkey Sandwiches, made with chopped Kitchen Garden salad and hummus.  Executive Chef Cris Comerford's recipe is below.  (Above: Mrs. Obama, Sam Kass, Elmo & Rosita roll a sandwich) 

Muppets Elmo and Rosita were the special guests of honor.  Earlier in the day Mrs. Obama announced that Sesame Workshop has partnered with the Let's Move! campaign to promote fresh fruits and vegetables to kids.

The sandwiches were made with lettuce and sunburst tomatoes newly plucked from the garden.  As Mrs. Obama and the kids harvested the vegetables, the chefs cooked the turkey and flatbread over charcoal grills set up alongside the crop rows. The easy recipe makes four servings.  The flatbread can be grilled on a grill, or in a saute pan on top of the stove.  More White House recipes are on the sidebar.  

White House Grilled Flatbread Turkey Sandwiches  
with Chopped Kitchen Garden Salad and Hummus

Ingredients
For the Flatbread
*4 Pieces Flabread (can use a pre-made sandwich wrap bread)

*2 Tablespoons Olive Oil

*1 Teaspoon Thyme, chopped

*1 Teaspoon Garlic, chopped

*Salt and Pepper to taste

For the Wrap Filling
*2 Ounces Sliced Roasted Turkey (may use deli slices)

*1 Tablespoon Hummus (recipe below)

*8 Lettuce Leaves, washed and spun dry

*1 Cucumber, peeled and finely chopped

*12 Sunburst tomatoes, cores and cut in half

*1 Green Pepper, thinly slice

For the Hummus
*1 15-Ounce Can of Chickpeas, drained and rinsed

*2 Tablespoons Olive Oil

*4 Tablespoons Tahini Paste

*1 Teaspoon Harissa or Hot Sauce


*1 Teaspoon Cumin

*2 Cloves Garlic 

*Juice of 4 Lemons

*Salt and Pepper to taste 

Method
1.  To prepare hummus: Blend all ingredients together in a food processor until emulsified.

2.  For the flatbread: In a small bowl, whisk together the olive oil, thyme, garlic and the salt and pepper.  Brush both sides of the flatbread lightly. Grill on both sides until warm and soft.

3.  Set flatbread on a cutting board. Spoon the hummus in the middle area.  Add the turkey slices. 

4.  Layer on the lettuce, tomatoes, cucumber and peppers. Season with salt and pepper to taste. 

5.  Roll the sandwich wrap up, and cut in the middle.
