New White House Recipes: Apples Baked 5 Ways

From the Easter Egg Roll, a basket load of sweet and savory recipes from Executive Pastry Chef Bill Yosses...
At this year's 135th anniversary White House Easter Egg Roll, President Obama and First Lady Obama's guests were invited to snack on apples in the Play With Your Food area, and Executive Pastry Chef Bill Yosses and his team demonstrated healthy and delicious cooked apple recipes in the Kids' Kitchen.  Five of the recipes are below: Baked Apples with Blue Cheese and Figs; Baked Apples with Balsamic Vinegar and Rosemary; Cranberry-Orange Sautéed Apples; Moroccan-Spiced Roasted Apples and Lemon Poppy Seed Roasted Apples. Yosses at the Roll
The recipes are quick and easy, but take one of America's most beloved hand fruits to new heights with interesting flavor combinations, a Yosses signature.  At the White House, bowls of apples for staff are placed around the East and West Wings, and there's always an apple bowl instead of a floral arangement on President Obama's coffee table in the Oval Office.  There's even a young apple tree growing on the grounds, in the Childrens' Garden on the South Lawn.

The recipes can be served as snacks, as appetizers, and as side dishes at mealtimes. The  Cranberry-Orange recipe calls for 1 1/2 pounds of apples, and the Moroccan Spiced and Lemon Poppy Seed recipes call for two pounds of apples each.  The other two recipes are smaller, using just four apples each.  Any kind of apple can be used, sweet or tart, depending on personal taste preference.  No special equipment is needed.   CLICK HERE for videos of the Easter Egg Roll cooking demonstrations.  Check the sidebar for all White House recipes.

Baked Apples with Blue Cheese and Figs

Ingredients

*4 Apples

*1 Tablespoon canola or safflower oil

*1 Tablespoon sweet wine or port

*4 Ounces crumbled blue cheese

*1/4 Cup chopped dried figs (or raisins)
 

Preparation
1. Preheat over to 300F
 

2. Halve and core apples. 

3.  Put cut side down in a greased 9-by-13-inch pan. Drizzle with oil and wine.  Place in oven. 

4.  While apples are baking, combine blue cheese and chopped dried figs/raisins.
 

5.  After 10 minutes, turn and baste apples, then set cheese and dried fruits on apples.  Resume baking for 10-15 more minutes, until apples are soft to the touch and slightly yielding, about 20-30 minutes total baking time.

Baked Apples with Balsamic Vinegar and Rosemary

Ingredients 

*4 Apples

*1 Tablespoon olive oil

*1/4 Cup balsamic vinegar

*1 Tablespoon chopped fresh rosemary

Preparation

1. Preheat oven to 300 F.
 

2.  Halve and core apples.

3.  Put cut side down in a greased 9-by-13-inch pan.


4.  Drizzle with olive oil and balsamic vinegar.  Place in oven, and bake for 10-15 minutes, then turn and baste apples with juice from pan.


5.  Sprinkle apples with fresh rosemary after turning, resume baking until apples are soft to the touch slightly yielding, about 20-30 minutes total baking time.

                 Cranberry-Orange Sautéed Apples


Ingredients

*1 1/2 pounds thinly sliced apples

*4 Tablespoons canola or safflower oil

*1 Cup fresh cranberries

*2 Tablespoons sugar

*1 Tablespoon orange zest

Preparation

1.  Peel and cut apples in half and core, remove apple seeds and slice into thin slices.
 

2.  Place oil in sauté pan over medium heat. 

3.  Add apples, sugar, orange zest, and cranberries; cover, turn the heat to low and cook for 10 minutes.
 

*Serve warm

                  Moroccan-Spiced Roasted Apples


Ingredients 

*2 Pounds apples, cut into chunks

*2 Tablespoons olive oil

*1 Tablespoon minced garlic

*1 tablespoon minced ginger

*1 Teaspoon ground cumin

*1/2 teaspoon ground coriander

*1/2 teaspoon cinnamon.

Preparation

1.  Preheat oven to 425 F.
 

2.  Toss apples with olive oil; spread on a rimmed baking sheet.
 

3.  Roast for 10 minutes.

4.  Add minced garlic, minced ginger, ground cumin, ground coriander and cinnamon; toss well to coat.

5. Roast until tender, stirring occasionally.

              Lemon Poppy Seed Roasted Apples


Ingredients

*2 Pounds apples, cut into chunks
 

*2 Tablespoons canola oil or safflower oil

*2 Tablespoons sugar

*1 Tablespoon poppy seeds

*1 Tablespoon lemon zest

Preparation

1.  Preheat the oven to 425 F.
 

2.  Toss apples with oil; spread on a rimmed oiled  baking sheet.

3.  Roast for 10 minutes.

4.  Add sugar, poppy seeds and lemon zest; toss well to coat.

5.  Roast until tender, stirring occasionally, another 10 minutes.

*Serve warm
