Encouraging citizens to cook at home is getting a big push from the White House for Year Two of the Let's Move! campaign, in an effort to get healthier foods onto dinner plates. For Passover, the White House released a collection of recipes created by notable non-White House chefs. And now Oprah Winfrey has been given a collection of six White House recipes for Oprah.com, in a menu created by Sam Kass, Senior Policy Advisor for Healthy Food Initiatives. President Obama and First Lady Obama appeared on Oprah's show on Monday, and Oprah's collection is an on-line bonus element for the outing.
"From piping hot lasagna to apple pie, White House chef Sam Kass gives classic comfort foods a fresh twist. Try six dishes he serves the first family," notes the blurb on Oprah's site.
At Wednesday's "Future of Food" conference at Georgetown University, Kass pointed to cooking as one of the most important tools to combat childhood obesity (Kass at left, during his remarks).
"The First Lady is doing a lot of work trying to engage chefs, trying to get out recipes to help empower families, parents and kids, to help them cook," Kass said, noting that time constrains and a lack of knowledge of cooking technique are both big issues for creating healthy meals.
Mrs. Obama will be including recipes in her forthcoming book about the White House Kitchen Garden, which will be published in April of 2012.
Each of the recipes in Oprah's collection has been previously issued by the White House; it includes Kass' recipe for Sweet Potatoes and Greens. There's also Turkey Lasagna, created by Executive Chef Cristeta Comerford for an appearance on the Martha Stewart Show. Two recipes that were issued in conjunction with Comerford's appearance on the special White House episode of Iron Chef America, which premiered in January 2010, are included: Kitchen Garden Herb-Roasted Chicken and Cauliflower Gratin. Soup gets a nod: There's White House Broccoli Soup, created by Comerford. As a sweet finish, Kass selected Executive Pastry Chef Bill Yosses' White House Apple Pie. It's the most frequently searched for dessert recipe here at ObFo, and it's delicious.
